Bored .... Having to transfer 750+GB to backup device. Its like watching paint dry. Its transferring at around 125MB/sec so ~ 10 sec per gig = 2hrs..........

I would consider watching a movie in the meanwhile.
As a plus, lunch time is coming....
Keeping watching at the files transfer will not speed it up.

Just hoping it finishes before the new hardware arrives in 2.5 hrs

It actually took just over 1.5 hrs to transfer. It was writing to backup at around 1.4Gbps.
All done now.
Installed the new Xbox, which now has 17.5TB of available storage lol. (39% used already)
