if for example I am getting SMS, how do I manipulate the text, since all is in byte()
meaning putting into var (do I need to use bc.copy?)
and same for other responses I am getting after sending AT commands

It doesn't matter how you receive the bytes.

You can use GlobalStore or Queue or Stack to store arrays of bytes.
