but i dont understand why @Erel dont initialize BTSerial with : Pin TX1:18 and Pin RX1:19 ...

You can initialize with any pins that you want...

but on official tutorial , @Erel are using : port 18 ( TX1 ) and port 19 ( RX1 ) to use HC-05

dont understand why him dont initialize this both Ports on code ...

If you are already using pins 18 and 19 for something else, then you can use other pins instead, thus you BTS.Initialie(9600, RXPin, TXPin), there's nothing complicated about that...
