Why not if Java can work at its Linux version...

It will work in the same way it does in the Pi4.
It will run Java apps, like servers and any non-ui apps.
Since jfx is not supported for some time now, UI apps are not supported, unless you install into the pi a jfx enabled Java version, at the expense of some new functionalities, and of course, have the same Java version on your dev environment to compile to.
