I've been testing these days a VPS from this host:

They are in Spain (Barcelona) and you can have a VPS from 3 €/month. They offer 5€ for free, so you can test it for free for a while. You must give your credit card data (to avoid a lot of testers) but they are reliable. They even phone me after a few days to ask about my experience.
You get some "templates" to create your VPS, and it's very easy to configure snapshots, backups, etc...
