organising views or themes

Hello world!
I was wondering what is the best method to organise colors on a big project. Using designer is welcome when we have a few views and forms.
But what about if the project expands? What if you want to change colours but not to open all these forms.
How do you all organising your themes? Write your opinion or good practices if you like. Lets have a nice conversation that gonna help a lot newbies (like me)

After several hours trying to reproduce this I haven't make anything useful.
I there anywhere a simpler example of using themes and the json file?

The idea is to use named colors => variables, instead of color values. I don't remember whether a simpler example is available.
