I don't know what happened, but cranberries were in very short supply (non-existent) this year in BC, Canada.... (either fresh or frozen - both would do).
How can one possibly cook and eat a turkey without a fresh cranberry sauce? (not from the freakin TIN can)...
Faced with this dilemma, what can I do? My young daughter and her friends were relying on me for our New Years Eve meal and memories (with fireworks show at our semi-wilderness outpost).
Then it dawned on me.... What's my next best thing to cranberries --- BLUEBERRIES! I still have 10 - 2lb bags of them left in my freezer, picked fresh by me from the high artic tundra at 3 am over 3 August nights - keeping my lazy eye scoping the landscape for the grizzly bear - their favorite food too.
So, I boiled them up, added the sugar and my special sweetener, Canadian maple syrup. Then my old fart brain kicked in.... I remembered our club cook had a bag of frozen Cran Raisins (frozen, slightly dehydrated cranberries). I "borrowed" a cup of these and added them to the boiling pot and cooked for another 15 minutes....
Well, I thought a fresh cranberry sauce was the ultimate for turkey topping... but this has surpassed it 10 fold! OMG what a flavor sensation!!!!!
I still have much of the sauce left over. I shall cut in a half brick of Philly cream cheese and bake it in some small pie tart shells. I bet I won't spit any of that out....
From this I have learned, there is always something to learn and look forward to, however it may revel itself...
